I added baked brownie pieces to my skillet cookie, and I’ll never go back! This brownie and chocolate chip cookie combo is heaven!

Here is a gooey brownie chocolate chip cookie combo to die for! 🍪

If you’re a fan of giant gooey cookies and fudgy brownies, this viral dessert mashup is about to become your new obsession. I recently saw a reel where someone folded chunks of baked brownies into chocolate chip cookie dough before baking into cookies. I knew I had to try it, but as a skillet cookie!

To make it even easier, I started with a boxed brownie mix for the brownie bites, then used my favorite homemade skillet cookie recipe I posted a few years ago. The result? A warm, buttery chocolate chip skillet cookie loaded with soft, fudgy brownie cubes in every bite. It’s rich, chocolatey, ridiculously decadent, and absolutely perfect for sharing…or not!

Baking the brownies first ensures that the brownie stays separate from the cookie and the end result is a brownie and chocolate chip cookie together but separate! It yields a different texture than when you combine raw brownie batter with cookie dough.

Brownie Stuffed Chocolate Chip Skillet Cookie

A warm, gooey chocolate buttery skillet cookie loaded with soft brownie cubes in every bite.

Preheat oven to 350 degrees. Bake the brownies according to the package directions and let them cool completely. Cut the brownies into small bite-sized cubes (about ½-inch pieces).

Grease an 8-inch cast iron or oven-safe skillet or a similarly sized cake pan with a little additional butter. In a large mixing bowl, cream together butter, egg, vanilla, and both sugars with a hand mixer.

Stir in salt, baking soda, and flour. Mix in chocolate chips. Gently fold about 1½ to 2 cups of brownie cubes into the cookie dough, being careful not to overmix. (I used about half a batch of brownies.)

Spread the dough into a greased cast iron skillet. Bake for about 20-22 minutes until the edges are golden and the center is just set. Let cool for 10–15 minutes before serving.

Extra tips for making this easy skillet cookie:

  • I am using an 8-inch cast iron skillet here to bake my cookie, but you can use any oven-proof skillet.
  • Don’t use warm brownies or they’ll melt into the dough.
  • Save leftover brownie cubes to sprinkle over ice cream.
  • Underbake the skillet cookie slightly for the ultimate gooey center.
  • Add flaky sea salt before serving to balance the sweetness.
  • Stir in chopped walnuts or pecans for a different variation.
