Two slices of fried cheese act as the bread in this pickle and chicken snack!
1
Heat a skillet on the stove to medium heat. Add two slices of cheese to the middle of the pan.
2
Add a few slices of pickles to the cheese and let it cook for a few minutes until the cheese is golden. Turn off the burner and let it cool for a minute to harden.
3
Use a spatula to transfer the “sandwich” to a plate. Add the chicken on top. Fold it over and enjoy it warm. As it cools, the cheese will crisp a little.

- Swap the pickles for jalapeños if you like heat.
- If you’ve got mayo or mustard, swipe a thin layer on top of the chicken.
- It helps to use a nonstick pan for this idea. I am using my 10-inch Hexclad frying pan here and love it.
