How to Make Cheesecake Bites

Start with a chilled cheesecake so it holds its shape. Use a round biscuit cutter in whatever size you like. I used the smallest one in my set. Press the cutter straight down into the cheesecake to create clean circles. These circles will be the base of your Santa hats.

Prepare your strawberries by cutting the tops flat. Place a strawberry upside down onto each cheesecake round so the point becomes the top of the hat. Add whipped cream around the bottom edge of the strawberry to create the fluffy hat trim. Add a tiny swirl of whipped cream on top for the pom pom.

More tips for making Santa hat cheesecake bites:

  • Be sure to add the whipped cream and compile right before serving as it tends to start weeping quickly. As an alternative, you could use a white frosting.
  • If you spray the biscuit cutter with nonstick spray first, there is less sticking.

cheesecake dip made from cheesecake scraps (1)

Don’t waste the scraps of cheesecake. Make an easy dip!

All I did was add it to a mixing bowl with about a tablespoon or two of heavy whipping cream and used a hand mixer to whip it together. I topped it with chocolate chips and used graham crackers for dippers. This honestly turned out amazing and was a big hit.

I may even do this in the future without making the hats! We loved it so much. You could also consider adding fresh strawberries as dippers. The graham cracker crust in the cheesecake added to the delclious flavor!
