Preheat the oven to 425 degrees. Line a baking sheet pan with parchment paper.

Lightly pound the chicken breasts with a meat mallet or rolling pin until they’re about the same thickness. This helps them cook evenly and stay juicy.

In a small bowl, whisk together the brown sugar, smoked paprika, garlic powder, onion powder, dried herbs, cumin, salt, and pepper.

Pat chicken dry with paper towels. Drizzle each breast with olive oil, then rub thoroughly so it’s lightly coated. Sprinkle the seasoning mix over both sides of the chicken and rub it in.

Arrange the seasoned chicken breasts on the sheet, spacing them apart. Bake for 18–22 minutes or until the internal temperature reaches 165 °F. Use a meat thermometer if you can.
